Should the Essex Class have a spinning core. I know a spinning core isn't enough to provide gravity for the entire ship and likely what I'm thinking of would be like rotating modules that are specialized mission modules.

Maybe have multiple parts spinning at different speeds. The solar panel module for sure. The ring that is between weapons module and shuttle docks. Here's the updated core that I haven't combined with the rest of the ship yet.

I'm striving for plausible realism so some very small liberties can be taken, but for the most part I want things to be realistic.

Spinning cores are so much cooler than non-spinning cores.

Seriously though, spinning sections on ships has almost been overdone, then again non-spinning has been overdone too.  But I'd say go with a few spinning sections, at least with the UN ships.  Maybe the Alliance could have some rudimentary anti-gravity tech since they're supposed to be more advanced anyway.
